-Why are chiles so good for me?

-They are the world’s strongest anti-oxidant and possess the greatest ability to stimulate the human system, helping cure and or fight disease of most any kind.



-If my hands burn from handling chiles, what can I do?

-The best is to rub them with lime juice or a similar acid such as vinegar. Next time, use rubber gloves, butter your hands or spray them with liquid shortening and use greater care when touching the chiles, not touching the placenta, seeds or veins.



-Which is hotter, the stems or the veins?

-It is a tossup. The veins carry the capsaicin from the placenta, the point of production and it is stored in the seeds.



-How can I tell a hotter chile from a milder one?

-Milder chiles have broader shoulders and blunter tips and are generally lighter in color.

Weeklong Class 2008


The Week Long class begins with a get-acquainted reception at 6 p.m. on Sunday, followed by dinner at a local restaurant featuring New Mexican specialties.

Continental New Mexican breakfasts at 8:30 AM start each day, Monday through Friday, followed by Jane’s review of the history of the cuisine and major ingredients. A demonstration of the menu items for the day follows, along with hints and techniques for success. After the demonstration, it is your turn to shine! Students begin cooking in small groups, guided through the recipes by Jane and her assistants.
Finally, you will enjoy the fruits of your labor with a bountiful lunch complete with your choice of beverage, including selected wines and beers. Each session concludes about 2 p.m.

Our special full participation class features the Southwest's classic, as well as innovative dishes. We are rated by BON APPETIT magazine as one of four best vacation cooking schools in the world! Class fee includes five individual classes, breakfast and lunch each day, two dinners, a get-acquainted reception plus a cookbook, apron and a diploma to take home. A deposit is required to reserve a space in the class. If a cancellation must be made, a $150 administrative fee will be deducted and every attempt will be made to reschedule. If the cancellation is not made 60 days ahead of time, the fee will be applied to future schools and cannot be refunded. In the event that Jane Butel's Cooking School must alter or cancel the class because of events beyond its control, the fees will be refunded.
